I recently wrote a piece for Crumbs magazine about the ‘superfood’ Kale. Here’s an excerpt from the piece –
“While flicking through my vegetable-planting calendar, looking at the jobs I should be doing in the garden, I noticed the section on ‘what to eat this month’. Sitting amongst the list of recommended seasonal vegetables – broccoli, cauliflower and leeks – was kale, the current celebrity of the food world.
I’ve heard a lot about this gorgeously green, nutrient-rich superfood recently. Kale has seen a steady rise in popularity, an increase in sales, and a big stamp of celebrity approval. Championed by the likes of budget food blogger, Jack Monroe, and used in smoothie recipes by actress-turned-healthy-eating guru, Gwyneth Paltrow, kale hasn’t done badly for a plant previously seen as only fit for cattle feed…”
